Blackened fish tacos on plantain flatbread

I’m just going to come right out and say it: this Whole30 Approved Blackened Fish Tacos on Plantain Flatbread is DELICIOUS. Even my hubby who (I just found out) doesn’t like fish tacos liked it, and that’s saying something. On January 1st, I started my 5th Whole30. I had a great year with great experiences from it the beginning of last year, and then I fell of the wagon the last half of the year. I had lost weight and was feeling pretty good about my progress, then my birthday came along in July, and the holidays never seem to end after that. I knew I needed to change up my habits and STAT and I knew how good Whole30 makes me feel.

Granted, the 1st week pretty much sucks because your body is detoxing from all the sugar it’s used to and it realizes it can’t rely on that as a source of energy and it tends to revolt. My workouts sucked, my attitude sucked, and all I wanted was to eat a dozen Krispy Kremes and then ask for forgiveness later. But I didn’t.

I’m surprised I didn’t mention this sooner this month, but I can gladly say i’m on day 27, and i’m feeling great. I’ve had a few non-scale-victories, and it feels good to fit into pants that weren’t fitting the beginning of the month! Before I started this whole30, I had some crazy ideas of really making it a whole 90. Do I REALLY want to do that. NO! But my probably could really use that because of my years and years of sugar dependency. Anyways, onto this recipe!!

This recipe was inspired by Paleo Takeout without the Junk from Russ Crandall. I’m not usually a fan on ANYTHING plantain, but these flatbreads are delicious, and the blackened fish taco is just perfect with the yummy avocado mayo that you make with it. Here’s what you need for the flatbread first…

Plantain Flatbread

2 large eggs
1 medium yellow plantain, cut into chunks
1 1/2 C tapioca starch (and it turns out you can just leave this out if you completely forget to add it, which is what I did)
1/2 C full-fat coconut milk
2 Tbsp softened ghee
1/2 tsp salt
1/4 tsp white pepper (you could just use black pepper, I suppose, but there is something absolutely delightful about using white pepper instead!!)
pinch of garlic powder

–Preheat the oven to 375 degrees F. Add all the ingredients in a food processor until smooth.

–Line baking sheets with parchment paper and spoon 1/4 C of the batter onto the parchment paper. You should be able to get 4 scoops a sheet. Spread out the batter to about 5 inch rounds, and make sure the edges aren’t too thin.

–Bake for 10 minutes and the flip and bake about another 4 minutes. The edges with start to crisp around the edges. Allow to cool for a minute, and serve.

***NOTE: If you don’t end up eating all of these, you can refrigerate in a sealable plastic bag for up to 2 days. Reheat in the oven for 5 minutes at 350 degrees F.

Blackened Fish Tacos

Whole30 Approved Blackened fish tacos on plantain flatbread4 cod fish fillets (you could also use tilapia, halibut, or catfish)
1 Tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp dried thyme
1 tsp celery salt (fun fact: it smels exactly like fish food…well, at least to me)

Avocado Mayo Sauce
1/2 avocado
3 Tbsp Mayo
2 Tbsp cilantro leaves – chopped
2 Tbsp water
juice from 1/2 lime
1/2 tsp salt
1/4 tsp black pepper

4 Tbsp ghee
1/4 head green cabbage and 1/1/4 head red cabbage
lime wedges

–Mix together the paprika, garlic powder, onion powder, pepper, thyme and celery salt.  Pat your fish dry with paper towels, and season the fish generously. Set aside.

–Combine the sauce ingredients until smooth. It should be the consistency of a thin mayo. Add water if it’s too thick. Cover and place in the fridge.

–This advice is KEY!!!! Open up a few windows, maybe even a door, and turn on your oven hood fan.

–Heat a cast iron skillet over high heat until it start smoking (about 5 minutes). Add ghee and seasoned fish right away and sear for 2 minutes on each side. Remove the fish from the pan and flake into bit-size chunks. Serve on flatbread with shredded cabbage, avocado mayo and lime.
