First off, this recipe isn’t as psychedelic as it sounds. This magic mushroom chicken recipe is FDA approved and totally legal! 😉

I’m on my last week of my fourth Whole30, and it may have been rough, but i’m feeling great! I knew going into this what to expect seeing that it is my fourth (WOW!), but that part didn’t make it any easier. Knowing what some of my favorite go-to recipes are did though, and this is one of them. It’s so easy, and great for the grill!

If you’ve never heard the word ‘umami,’ then you are missing out! Umami, to the Japanese, is one of the five basic tastes (together with sweet, sour, bitter, and salty).  It’s this savory deliciousness that can’t really be explained just experienced! Enter Magic Mushroom powder! One of my saving graces during my Whole30s has been magic mushroom powder. To get the recipe for it, check out the source HERE– you can thank me later. 🙂

This recipe, along with the magic mushroom powder, comes from the Nom Nom Paleo cookbook. Whole30 and Paleo have a lot in common, except whole30 manages to eliminate honey, maple syrup, and any other sugar you can think of, but this recipe works for both! And it’s packed with umami!

What you need:

4 lbs chicken drumsticks (the initial recipe calls for chicken wings, but i’m more of a leg girl, myself)
2 tablespoons of Magic Mushroom Powder
1/2 teaspoon fish sauce (I know what you’re thinking….FISH SAUCE!?!?! NASTY!?!! Enter Umami. You are welcome.)
2 small limes, cut into wedges

What you do:

Cover and marinate the wings in the fridge for up to 24 hours–I usually give it at least 3, but NO MORE than 24. One time I did it for almost 36, and it was SOOOOO salty. Just don’t do it.

After you’ve marinated the wings, preheat your grill probably around 400 degrees F. Once hot, place your drumsticks on the grill with the thickest part of the meat down.

This should also have most of the skin as well! I flip mine after about 10 minutes to make sure it’s all nice and crispy, then cook for another 10 minutes, or until a meat thermometer reads 160 degrees F. And voila!

Serve with the lime wedges!

This is seriously SOOOOOO good, I can’t even handle it, and it makes for great leftovers!
